Elaboration
Made with 100% Xarel·lo from old vines. Entry of the whole grape to avoid oxidation. Directly cold pressed in the pneumatic press. Only flower must is used. Static mud removal for 24 hours. Fermentation at 15-17ºC in stainless steel tanks.
Later aging for 3 months on its lees to add silkiness and complexity.
Tasting note
It is a structured wine where the aromas of white and fresh fruit stand out. It has memories of aromatic herbs from the Mediterranean. In the mouth we find all its complexity with character provided by the lees combined with the powerful acidity of the Xarel·lo.
