Reception of the grapes at low temperature to avoid oxidation. Maceration in a pneumatic press for 4 hours to extract the soft color of the Pinot and its aromas. Pressed from the grapes at low temperature. Pressed very gently looking for the best quality of must. Subsequent first fermentation at 14-16ºC. Second fermentation in bottle and aging for 16 months in bottle
